From Roast Chicken Leftovers to Healthy Lunches
One of the best reasons to roast a chicken is for the leftovers. Why? Because there are so many versatile ways to make leftover roast chicken into new dishes that offer new flavors from one meal to the next. Here are three ways to turn your leftover roast chicken into three different dishes, perfect for box lunches.
Chicken Club Salad. If you’re leftover roast chicken is still in big pieces cut into ½-inch chunks. Place chicken into a large bowl. Add chopped tomatoes, chopped red onion, chopped celery, mayo, and just a dash of white-wine vinegar. Sprinkle with cooked bacon.
Mediterranean Chicken Wrap. If you’re leftover roast chicken is still in big pieces cut into smaller pieces for a wrap. Spread 1 tablespoon of olive tapenade onto a whole-wheat tortilla. Place mixed greens, chopped tomato, chopped artichoke hearts, chopped cucumbers, and chicken onto tortilla. Roll up and wrap for lunch.
Chicken and Corn Enchiladas. Shred leftover roast chicken. Place onto a corn tortilla, along with corn and low-fat shredded cheese. Roll up tortillas and place in a casserole dish. Top with prepared enchilada sauce. Bake in a 400 degree oven for 15 minutes. Top enchiladas with cheese and cook for 5 to 10 minutes more, until cheese is melted to desired consistency.
